To make this recipe you need the following ingredients.
- Bananas
- Flour
- Eggs
- Vegetable oil
- Raisins
- Sugar
- Baking powder
- Baking soda
- Nutmeg
- Salt
Procedure for making banana cake with raisins
- First peel the bananas, place them into a small bowl and mash them with a fork.
- Then add eggs and vegetable oil into the bowl. Mix the contents well and set aside.
- Next place flour into another bowl, and add baking soda, baking powder, nutmeg, sugar and salt. Mix well.
- Now pour the dry ingredients into the bowl of wet ingredients and mix roughly to get a smooth paste.
- Finally, add the raisins and mix well.
- Set oven to preheat at 350oC and in the meantime, line the cupcake pans with cupcake liners.
- Use a table spoon to scoop 1½ spoon of the batter and place in each cupcake liner on the tray.
- Place the tray in the pre-heated and bake for 20 minutes (test by dipping a toothpick into the cake, if it comes out clean then the cake is ready).
- Remove from the oven, allow to cool, and serve.

Notes
- Make sure the oven is preheated before placing the tray inside to bake. Do not place tray inside a cold oven.
- Once the cake is ready, take it out of the oven and allow it to cool outside. Do not turn off the oven heat and allow the cake inside, else the mixture will collapse and the swelling at the top will be wrinkled which is not pleasant to the eyes.
