Banana Cake with Raisins

Equipment

  • 1 Cupcake pan

Ingredients

  • cup flour
  • 2 bananas
  • 2 eggs
  • ¼ cup vegetable oil
  • ¼ cup sugar
  • ¼ cup raisins
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp nutmeg

Instructions

  • Peel the bananas, place them into a small bowl and mash them with a fork.
  • Add eggs and vegetable oil, mix well, and set aside.
  • Place flour into another bowl. Add baking soda, baking powder, nutmeg, sugar and salt and mix well.
  • Pour the dry ingredients into the bowl of wet ingredients and mix roughly to get a smooth paste.
  • Add raisins and mix well.
  • Pre-heat the oven to 350℃ and in the meantime, line cupcake pans with cupcake liners.
  • Use a table spoon to scoop 1½ spoon of the batter and place in each cupcake liner in the cupcake pan.
  • Place cupcake pan into the pre-heated oven and bake for 20 minutes (test by dipping a toothpick into the cake, if it comes out clean then the cake is ready).
  • Remove from the oven, allow to cool, and serve.

Notes

  1. Make sure the oven is preheated before placing the tray inside to bake. Do not place tray inside a cold oven.
  2. Once the cake is ready, take it out of the oven and allow it to cool outside. Do not turn off the oven heat and allow the cake inside, else the mixture will collapse and the swelling at the top will be wrinkled which is not pleasant to the eyes.
