Macaroni Salad

Macaroni salad is one of the easiest salads you will ever make. It is creamy, it has plenty of vegetables and its perfect for any time of the day. This one pot dish is delectable and can be made in as little as 15 minutes. Wow! Lets get started.

Macaroni salad is salad made with macaroni, carrots, green beans and mayonnaise. This salad is my mother’s favorite and I watched her make this for my elder sister over and over after she had her first child. That’s how I came to love and adopt this salad as one of my favorites.

With macaroni salad, everything is cooked in one pot, and there is not so much preparation to be made aside chopping your vegetables. It is quick, and easy to make, requiring no complicated spicing as salt does it all here.

You can have this salad at any time of the day, be it for breakfast, lunch, brunch, or dinner. It is also great for parties and gatherings.

To make macaroni salad, you need the following ingredients:

  • macaroni
  • avocado
  • carrots
  • green beans
  • mayonnaise
  • salt

How to cook macaroni salad

To start, put some water in a small pot, add salt and bring to boil. Then add in the macaroni and allow to cook for 5 minutes. Once you put in the macaroni, do not cover the pot while it cooks else it will foam and spill over on your stove.

While the macaroni is cooking, chop the carrots and green beans, and add then into the pot once the macaroni has cooked for 5 minutes. Mix and allow to cook for another 2 minutes.

Turn off the stove and strain out the macaroni and vegetables in a colander and allow to cool for about 5 minutes. Then transfer to a bowl and set aside.

Dice the avocado and add to the bowl. Also add in the mayonnaise and mix everything up well.

Put the bowl of salad in the refrigerator and allow to chill. Serve chilled and enjoy.

  • 7 oz macaroni
  • 2 medium carrot
  • 10 small green beans
  • 1 medium avocado
  • 4 tablespoons mayonnaise
  • ½ teaspoon salt
