This mushroom stir fry is simply the best! It is a delicious combination of mushrooms and all your favorite vegetables in one place. With so much flavor and taste, this is the perfect vegetable fiesta combo for all.
Mushrooms are a great substitute for meat and fish, especially in the vegetarian diet. If you have never tried mushrooms before, or you tried them but didn’t like them, you may want to try them this way then.

- Mushroom
- Irish potatoes

- Yellow bell pepper
- Carrots
- Green beans
- Broccoli
- Parsley
- Ginger
- Garlic
- Salt
- Chicken bouillon seasoning

How to cook mushroom stir fry
I have in the past been frustrated making mushroom stir fry because whenever I add the mushrooms, I get my whole pot of vegetables soaked in the water that comes out of the mushrooms. This always spoils my desired result for a good crispy stir fry pot.
And so, I had avoided mushrooms in my stir fry until recently when I tried out this new way of cooking them and they clicked. So, let’s dive in.
First wash the mushrooms and allow them to strain for about 1 minute. Then place them in a pot on the stove and turn the heat on.
Add in a little salt, bouillon seasoning, ginger and garlic and cook for about 10 minutes (or until all the water from the mushrooms has dried up). Stir well from time to time so all sides of the mushroom get cooked. Then remove the mushrooms from the pot and set aside.
Wash all the vegetables to be used and chop as desired. Also peel the potatoes and dice them in small cubes. This makes them cook at the same pace as the other vegetables that are generally softer in texture than it.
Pour some oil into the pot and let it heat up for about a minute. Then put in onions and allow to fry for about a minute. After that, put in all the chopped vegetables and stir fry for about 3 minutes.
Finally add in the mushrooms and stir fry for another 2 minutes. Turn off the heat and allow it to cool and serve.
Does this plate not look amazing and mouth watering? I bet you it does. You do not have to be an expert cook or chief to do this mushroom stir fry. It is easy, very healthy and also very satisfying. You sure should try this.

- 16 ounces Mushroom
- 7 ounces Irish potatoes

- 3 ounces onion
- 4 ounces yellow bell pepper
- 3½ ounces green bell pepper
- 3 ounces green beans
- 7 ounces carrots
- ½ teaspoon ginger
- ½ teaspoon garlic
- 4 ounces broccoli
- ½ ounces parsley
- 1 teaspoon salt
- 1 tablespoon chicken bouillon seasoning

Notes
